To Whom It May Concern:

 

My name is REDACTED and I am part of the family behind Malo Brighton.
We have applied for an Alcohol Premise Licence for our new premise located at 90 St. James Street, BN1 2TP, and I wanted to personally get in touch with you to explain a bit better our business, my family’s visions and our goal.

 

We are a family of 5, myself, my husband and 3 adult “children” who all work with us. We have a steakhouse in Brighton called Baqueano, as well as an Empanada shop located at Duke Street, also called Malo. Both premises are within the CIZ area, and I am the licence holder for both places. In over 5 years of trading, we have never encountered or created any problems associated with public nuisance or alcohol sale and both shops have very good reputation.

At 90 St. James Street we have a new premise which we are transforming into an Empanada shop and Deli, we are calling it Malo Kemptown. At our shop you can find a large selection of Empanadas, which are homemade and handcrafted by us, as well as typical Argentinian items, such as Yerba Mate, Alfajores, Dulce de leche and, if we reach an agreement, Argentinian Wine and Beer. 

 

We have received the proposed conditions for Malo Kemptown at 90 St. James Street sent by the police and I have carefully read them. I want you to have in writing confirmation that we agree to implement them.

We are happy to only sell alcohol as part of a meal, or for sale off premise, with a minimum food amount of £10. Deliveries to customers will be only carried out by certified couriers.
At Malo Kemptown alcohol will be always served to the customer, there will be no vertical drinking, and staff will be fully trained, and this training will be refreshed every 6 weeks.
Challenge 25 will apply and there will be clear signage to indicate so. 
Only Argentinian alcohol will be sold at the premise and the beer will be less than 6% ABV.

CCTV has been installed throughout the premise and footage will be available at any time for a minimum of 31 days and available to Sussex Police at any time. Authorised staff employed by Sussex Police will always have free access to the premise. 

 

We did also discuss with an officer from Environmental Protection how to prevent public nuisance and it was agreed that clear and visible signs will be present at all exits requesting customers to leave quietly and respect any nearby residents. 

 

We are applying to have a sitting area outside, just a couple tables directly in front of our shop, and if granted, CCTV for the outdoor area will also be installed. All furniture as well as any glasses or bottles, will be cleared by 9pm. 


We want to offer an Argentinian experience to customers who wish to do so; however, our range of alcohol is not particularly cheap due to it being imported to us. This explains why alcohol is not our primary activity. We are focusing more on the sale of coffee, tea, or any soft drinks with an empanada and in fact for this premise at Kemptown we are offering high quality coffee to ensure coffee as a main point of sale together with an Empanada or an Alfajor. 

 

At Malo Kemptown we are willing to take all necessary measures to help prevent crime and disorder in the City, my adult children will be working there every day so it is also in my own interest to ensure safety.

 

I hope after reading this letter you have a clearer idea of our business as well as our full cooperation to work together and get to an agreement.
